Lemon Cake Mix Cookies

Cake and cookies – what a great combination. I got the idea from Bake by Joanna and decided to make a version for my Summer Solstice party and boy were they tasty. These cookies have a light crispness on the outside and moist cake-like center. Not only are they pretty to look at, but they are very simple to make.

1 boxed lemon cake mix
2 eggs
1/3 cup vegetable oil
1 tbsp lemon juice
Zest of one lemon
1/3 cup confectioners’ sugar

Preheat oven to 375 degrees F.

Pour cake mix into a large bowl. Stir in eggs, oil, and lemon juice and lemon zest until well blended. Drop teaspoonfuls of dough into a bowl of confectioners’ sugar. (I find it easier to use a cookie dough scoop and drop the dough into the bowl of sugar.) Lightly roll them around until they’re covered and round into a ball before placing them on an ungreased cookie sheet.

Bake for 6 to 9 minutes in the preheated oven. The bottoms will be light brown, and the insides light and chewy.
