Writer’s Block

One of the downsides to having a blog is trying to think of something interesting enough that people will want to read. When I reflect on what I have going on in my life, the life lessons I’m learning along the way, my running, my work…I’m often left feeling lost trying to figure out what to write about. I’m not a cool foodie who can come up with my own great recipes to share; I don’t have cool techy advice to pass along; I’m not well-travelled so I can’t tell great stories about where I’ve been; I’m not a hardcore runner that can find compelling ways to draw you into a story about my running. I feel like my life is so full of great things, but do you really care about any of it? Who knows. I’ll just continue to chug along and hopefully you will occasionally check back in to see what I’m up to.

Healthy Breakfast Sandwich

When you need a quick, but hearty breakfast before work, a breakfast sandwich is the way to go. While my coffee is brewing, I like to make myself a breakfast sandwich to help me get my day off to a good start. This sandwich is super easy, good for you and – in my opinion – pretty darn tasty.

Ingredients
1 sandwich thin (I use Oroweat multigrain)
1 slice of Hormel Natural Choice deli meat – ham or turkey works (contains no nitrites or nitrates)
1 slice non-fat sharp cheddar cheese (I use the Kraft Singles brand)
1 egg white

Directions
Separate the egg white and cook to your preferred doneness. (Sometimes I feel bad for discarding the yolk, but I don’t need it for anything, so I just toss it.) Add the meat, egg white and cheese to the sandwich thin and microwave for 20-25 seconds to melt the cheese. (You can also put it in a toaster oven, but to save me time, the microwave is my appliance of choice.)

That’s it! The sandwich has approx. 160 calories, 2g fat, 5g fiber, 7g protein.

A few things I learned today

I learned a few things on my run tonight that I thought I’d share!

1. Running on a two-day stomach ache is not always the best idea. Adding a tight-fitting water belt over the stomach ache, even better!

2. Bugs are on a mission to become kamikaze pilots aiming for your eyes, nose and/or mouth.

3. Kitties should be kept as indoor pets. RIP innocent little kitty I saw on the running path.

4. Ducks always seem to travel in pairs. (I actually noticed that a few weeks ago, but I saw several pairs in the canal today and it made me thinking about it again.)

5. If you’re polite enough to pick up your dog’s poop on your walk, that politeness goes to crap if you just throw the bag on the ground.
